Soya chunks fry

Ingredients:

soya chunks meal maker - 250 gms
Turmeric Powder - 1 tsp
Salt - 1 tsp
Onion - 1 peeled and sliced 
Curry leaves - 2 sprig
Coconut Oil - 3 tblspn
2 eggs beaten with chilli powder and salt

For Masala:
Coconut - 2 cups
Cumin Seeds - 1 tsp
Fennel Seeds - 1 tblspn
Cinnamon Stick - 3 inch stick
Cardamom pods - 5
Chilli Powder - 2 tblspn
Onion - 1/4 Peeled 
Garlic - 5 cloves
Salt - 1 tsp
Method:

Take soya chunks wash them well. Add salt, turmeric powder in a vessel. Add in water to immerse the chunks, simmer for 10 mins, turn off the heat and let them soak for 20 min.
Drain the water and cut the soya chunks to small pieces.
Ground together the ingredients given in the masala list in a mixer to a coarse mix without adding water. Set aside till use. 
Now heat coconut oil in a wok, add in onions and curry leaves. Saute for a min.
Add in cooked soya chunks and toss well.Add in the ground masala and toss well. Season with salt and toss. Create a well and add the beaten egg and incorporate it into the soya chunks. Stir fry for 8 to 10 mins.

Tomato Rasam


2 medium tomatoes
6 cups water
1 tsp turmeric powder
2 tsp rasam powder
1.5 tsp salt
1.5 tsp tamrind paste
1/2 tsp jaggery
1/2 tsp hing divided
1/2 inch ginger
1 small green chilli
1/2 tsp pepper powder
Few strings cilantro stems
2 curry leaves stems
1/2 tsp mustard, cumin seeds
1 tsp ghee/oil


1.Boil the tomatoes in the microwave oven for 3.5 min with little water
2.Mash them in a strainer over the rasam preparing vessel
3.Add 6 cups of water followed by turmeric powder,rasam powder, salt, jaggery, 1/4 tsp hing , tamarind paste, 1/2 of the cilantro and curry leaves , ginger and green chilli
4.Boil the rasam till smell comes out for 5-7 min
5.Temper the rasam with ghee , mustard , cumin, hing , cilantro and curry leaved

Chow mein noodles

1 pkg Chow mein noodles ( 6oz)'
2 wedges of cabbage
1 red capsicum
1 green capsicum
2 carrots
1/2 pkg of mushrooms
1 red onion
3 cloves garlic
11/2 inch ginger
3 red chillies whole
1/2 cup roasted peanuts
1/3 cup soya sauce
1 tbsp sriracha
1/2 tsp pepper powder
1 cup meatless strips
3 spring onions
2 tsp salt ( if soya sauce is low sodium)
2 tsp sugar
2 tbsp oil

-Boil the noodles according to instructions
-Cut vegetables into strips
-Make sauce by combining soya sauce, sriracha, salt ,sugar and pepper powder
-Heat oil and fry ginger, garlic and red chillies followed by meatless strips and vegetables
-When vegetables are half done add the noodles
-Finally add the sauce , peanuts and spring onions

Vankaya Red Capsicum Tomato chutney

-2 long eggplants
-1 big red capsicum
-1 small tomato
-3 green chilles
-3 red chillies
-1/2 tsp jeera
-1 tsp urud dal
-1 tsp tamrind paste
-1 1/2 tsp salt
-1 fat garlic clove
-1/4 tsp hing

-Heat oil add jeera, eggplant,capsicum and tomato. Fry well
-Heat oil in another pan add urud dal, hing, red & green chillies, garlic and fry
-Add salt and tamrind paste with the above and grind it

Soba Noodles

Soba Noodles



-1 pack of soba noodles (12.8 oz)
-1 pack of white button mushrooms
-1 red bell pepper
-1 green bell pepper
-2 wedges of cabbage
-2 carrots
-2 onions
-5 fat garlic cloves
-1 inch ginger
-4 red chillies
-1/2 cup soya souce
-1 tbsp sriracha sauce
-2 tsp of salt (if soya sauce is low sodium)
-1 cup of meatless strips
-1 cup of crushed peanuts
-1 tsp sugar
-1/2 tsp pepper
-3 tbsp oil

-Boil soba noodles according to package instructions
-Cut all the veggies in long strips
-Heat oil and add garlic , ginger and red chillies
-Follow this with all veggies
-when veggies are cooked partially add the sauces, sugar and pepper
-Then add the noodles and mix well
-Serve hot
